Quiche Lorraine as an appetizer. Loads of onion.
The pie dough - kinda oily, think its too much margarine.
Browning the onion.
It took less than a minute as this pan is sandwich base.
All ingredient in and ready for baking at 160 - 180C for 12 minutes. Cream and cheese. Sprinkle some oregano on top for extra flavour.
Ready for chow! Didnt serve it this way, just for pic. Just dump the whole cut quiche and everyone dug in.
Main Course - Grilled Fish fillet of Grouper with Orange Tomato Salsa
Nothing much, just marinate the fillet with salt/pepper, paprika, some tarragon or oregano and LP sauce. Grilled till cooked. Topped with tomato salsa. i use orange, tomato, onion, capers, cilantro, lemon juice. Mixed all ingredient and topped over fish fillet. u can serve with rice ( i uses butter rice and some french bean ) Definitely will try to use some local fruits in future. Pineapple, green mangoes, green papaya ( maybe half ripe ), guavas, tangerines, etc.
Did some chocolate mousse as my friends love them and since i have extra dough, came out with this pineapple and black cherry pie.
Pan Fried Chicken with Tomato and Mushroom Sauce for those who dont take fish.
Someone gave me some nice sweet potato and i did this curried flavour sweet potato cream soup. Need more curry powder this one. Ran out of Madras Curry Powder. Make do with local curry powder for chicken. Not the taste i wanted but....... who cares. They finished it anyway.
Experimenting - Baked Fish with Chilli Cream Sauce. Came out no bad but peeps wanted more chillis. I use coconut cream to get the curry flavour. Prefer cream though. Chopped chilli ) green and red ) shallots, lemon zest, curry powder, some ginger sauteed with butter. Add in fish stock. Let simmer. Add cream and thyme. Season to taste. For the fish, i used red snapper.
Keep Kewl
