Just a follow up on the earlier soup. Thought of it thru some comment that mention soup.
I had this a lot of times during my stint in Vietnam. Home cook stuff that I have always been missing.
You will need the following
Bittergourd - the same species used in the earlier post
Minced meat - VN uses pork but can be substitute with chicken.
Woodear - soaked, juliene
Coriander - chopped leaves and stems. Remove roots.
salt and pepper
You may add whatever you deemed right into the stuffing. Had tried adding some egg white as well.
Cut a gap in the gourd to remove the pith. Mixed all the indredient and stuff into the gourd. Pour cold water into a pot enuogh to cover the gourd and simmer for an hour. Season and served.
Easy ? Not really....especially when cutting the gourd to remove the pith. I had a hard time but its fun and tasty.
Absolutely delish, if you do like bitter gourd.

ReplyDeleteHmm...mum doesn't boil bittergourd soup this way. She puts the chicken in, puts the striped gourd, cubed tofu, tomatoes (any ingredients) and boil for an hour or so. Salt to taste. Yummy!
