caesar salad

Well, dunno what to eat while waiting for the lamb being prepared by me friend. He's chopping the bones of the rack and french cut them. So, just whipped up something light and that i havent eaten for awhile. Caesar Salad. Anyone know how the Caesar came about ? It was created in 1924 inTijuana, Mexico by Caesar Cardini. His original recipe calls for Romaine, garlic, croutons, parmesan, boiled eggs, olive oil and LP sauce. Hmm... then where the hell did the egg yolk version came from ? What abt anchovies ? American again ? i got no idea. lolz. Apparently, the anchovies was used to replace LP sauce for some reasons. I have tried both and find it kinda similar but i prefered mine with raw egg yolk emulsifying with the olive oil. Delish.



These pictures are my version ..........prefered version *chuckle* is with anvhovies as i like the flavour. Imagine eating it just like dat. Yummy ......................and where's the water ? its salty.

1 lemon - for juice
1 slice anchovies - chopped
2 cloves garlic - chopped
a pinch of salt
few grinds of fresh black pepper ( rather 2 pinches )
2 egg yolk
1 head romaine lettuce - try to use the inner leaves as they are more juice and tender. Tear into bite size around 2 inches by 2 inches.
bread - cut into cube and fried with butter till golden brown ( crouton )
parmesan cheese
bacon - fried , cut into strip or chopped.
1/2 teaspoon french mustard
4 - 6 tablespoon olive oil

In a bowl, pour some lemon juice and add the anchovies. The acidity will dissolve the bones. Dump in the mustard, garlic and egg yolk. Mixed well. Slowly pour in the olive oil and emulsify the mixture. Seasoned with salt and pepper to desired taste.

Add in the lettuce and tossed till all are coated with dressing. Portion unto plate. Sprinkle with bacon, lettuce and crouton.

Serve immediately. Yummy !

  1. I like caesar salad but they usually cost a bomb. The price of a main dish, sometimes. Hope to try your recipe one day.

  2. 5xmom, this recipe doesnt cost a bomb. u can change the recipe according to what you have. No mustard, for example. Try them and let me know.
