Zuchinni with Minced Chicken
Wanted a simple dish yet nutritous enough to sustain my diet. I need to eat less carb and more fibre. Protein ? err.......let's put it this way.
I am not as strong will as Chanlilian when she went vegan for errr....49 days ? I cant remember and too lazy to search for it.
Since i'm not that strong and cutting down on both carb and meat , fatty meat that is.....opted to cook some zuchinni with some chicken meat and bean paste.
Very simple.....
1 number Zuchinni - wash clean, halved and sliced diagonally . By thinly sliced here I meant about 2 mm by 2 - 3 inches ( 5-7 cm )
1 clove garlic - chopped
2 teaspoon whole bean paste - minced
80 gm Chicken Meat - minced
Heat up wok and drizzle oil from the side. Throw in the chicken meat and sauteed till fragrance. Dump in the bean paste and garlic. Stir for a few seconds and then add in the sliced zucchini. Add a dash of water and stir for about 1 minute. Served hot.
Simple !

Hhhmmm....looks good! Is zucchini the same as courgette? I always see that in the supermarket but don't know how to cook with it other than in stew.
