Well, in my practical class today, we were asked to cook cream of pumpkin, hawaiian pizza and grilled tropical fruit.
mine was pizza and i had to do it from scratch coz the lecturer said it wont be good if i use premade dough. Happily searching my data base for the dough recipe.
Here goes : - for 1 - 2 pizza dough
10 gm or 1 teaspoon granulated baker's yeast
5 gm salt
30 gm sugar
2 tablespoon olive oil / corn oil
300 ml water
700 gm all purpose flour ( sieved )
1 teaspoon baking powder
1 add some water - lukewarm and 1/3 of the sugar and mix with the yeast ( to let it ferment for abt 20 - 30 seconds )
2 In the middle of the flour, create a well and place the rest of the sugar, salt, baking powder, water and fermented yeast. Mix well and knead. add olive oil gradually while u knead. It will be sticky at first from all the moist. Once the flour had absorb the liquid, it will be easier to knead.
3 Cover and let it proofed at 40 Celcius for 20 minutes.
4 Once it had rise, knead lightly to release the air.
5 Divide the dough into 2 equal portion and roll into circle.
6 Place on a well greased baking tray or pizza pan and topped with your choice of topping.
7 Baked at 180 Celcius for apporximately 10 - 15 minutes ( depending on our choice of fillings *wink* some like it thick )
basic tomato sauce
3 - 4 fresh tomato - peeled, deseed and cube ( depending on sizes )
250 ml Tomato Paste
2 Onion - Chopped
2 cloves garlic - minced
1/4 - 1/2 teaspoon dried oregano
1 teaspoon sugar - to offset the sourness of tomato
salt & pepper
2 pcs bay leave ( optional )
1 In a pot - heat oil and sweat the onion.
2 Add garlic and sauteed for another minute or two.
3 Add cubed fresh tomato and let it cook. Stir occasionally to relases the tomato juice.
4 Add oregano and bay leave and sauteed for a minute.
5 Add tomato paste and stir to mixed well.
6 Add some water or stock, season to taste. Dash a few drops of tabasco if desired,
Toppings - CHICKEN SAUSAGE, PINEAPPLE, OLIVES topped with MOZARELLA CHEESE and sprinkle with some oregano.
For your choice of topping, use pepperoni, any sausage or meat, bell pepper, tuna flakes, seafood, pineapple or whatever you want. Ensure to use Mozarella Cheese as when it melts its delish.
