Gazpacho Salsa

Kinda difficult to drink Gazpacho Soup - chilled and sourish for those with gastric problem. Thought abt it and was searching the net and found recipes for this lovely salsa. Similar ingredient but lots of variations. My practical exam is near and i was thinking of grilling or panfried chicken or fish and served with gazpacho salsa. Not too forget the Berny Potato as well.

Berny Potato

200 gm potato - par boiled and mash
form into ball, egg wash and dump into crushed almond flakes. Deep fried.

Gazpacho salsa

makes 4 servings
4 tomatoes, peeled, seeded and chopped.
1 diced red onion
1 small diced red bell pepper
1 diced cucumber
1 Tbsp Balsamic vinegar or wine vinegar ( i do prefer lemon juice as it is more fragrant )
1 tsp. minced garlic
1/2 tsp cayenne pepper ( substitute with chillis if need be)
1 bunch fresh cilantro/coriander, chopped ( remove roots please , lolz )
2 Tbsp polive oil.
Pinch salt and pepper ( i used crushed black pepper )

place cilantro,tomatoes,onion, capsicum, cucmber and garlic into a bowl. Season with cayenne and tossed with olive oil. Chilled in chiller. Add in the vinegar or lemon juice just before serving. Mixed well.

Grill chicken till cook( I season the chicken with salt and pepper, lil tabasco and worchestershire sauce). Place on top of salsa and serve with potato. Or u can spoon the salsa over the chicken and serve. For a change, use some pastas sauteed with just olive oil, slice garlic and cut dried chilli for extra flavour. Shave some parmesan over the pasta. Lovely too. Creamy cheesy spicy flavour pastas, with refreshing salsa and tender juicy chicken . Delish.
