Recipe - Beancurd with Dried Scallop

I had this dish with my chef, its a new dish in Ming Ren Restaurant created for CNY period only. It will be featured in their new menu by April 06.
















Look slike fish cake ain't it ? Its actually beancurd mixed in with minced fish, mushroom and some spring onion. Dried scallop Sauce. Served with brocolli for some colour and texture.
















No recipe was given and I am actually estimating here. Hehehehe! Hopefully I am not wrong.

100 gm beancurd
50 gm minced fish meat
20 gm black mushroom - chopped coarsely
spring onion - to taste
flour
1 no egg
seasoning

Mixed all ingredient till well mixed. Form into shape and coat with another layer of flour. Fried over medium heat till golden brown.

For the greens, just blanch in water with salt and a little oil ( optional ).

For the sauce

1 - 2 numbers of dried scallop - depending on size. Soaked for at least 2 hrs
Garlic - 1 clove - chopped finely.
Chinese Rice Wine

Sauteed the garlic and shredded dried scallop. Pour in 2 dashes of Chinese rice wine. Stir and then pour in the water use to soaked the dried scallop. Add in a little water use in soaking mushroom. Bring to a boil, add in oyster sauce, salt and white pepper. Lower heat, add a little thickening agent usually corn starch till slightly thicken. It will stick to the spoon and yet kind of runny. Check seasoning again. Pour over arranged beancurd and brocolli. Served hot.

Another dish that we had for dinner and I have posted this before. Deep fried Golden Needle Mushroom or Enoki. Simple mild enoki coated with seasoned flour and deep fried in high heat till golden brown. Sprinkle with paprika / chilli powder. Great with beer or as it is.

Delish simple meal. There's Chinese Spinach in Superior Stock with Century Egg , XinJiang Style Sliced Lamb with ZiRen Spice and Deep Fried Brinjal with Crispy Garlic fried with dried chilli and season with salt.


















Going for my day off starting Monday. Planning for a trip to Tanah Merah Kelantan - the only state I had yet to go in Peninsular Malaysia. Lets hope the trip will be on and then I can sample the food in Kelate.......

Boo, indeed it is nice. I love mushroom too but it depends on how they are cook.

Third Deep Fried Golden Mushroom that I have come across, besides the one from Jingle's and Jas's blog. Hmm... might give it a try one of these days. :)
