Just grilled over medium heat fire till cook. Careful to cut the chicken to uniform size. Skewer with capsicum first then chicken, follow by onion and so on and so forth. i personally prefer the onion below and above the skewers with chicken and capsicum in the middle, sandwich between the onion but ......................... cant fight them, i join them syndrom kicks in. *chuckle*
Cooked and served with tomato rice and coriander. i cooked up some spicy cream sauce of garlic, shallot and red chilli all chopped up. Sauteed in olive oil till fragrant, add in chicken stock. bring to a boil, reduce and add cream. Season. for extra flavour, u can choose to use bird eye chilli or japaleno or just plain old tabasco.
Will post the roast chicken that sort of fail - lolz !

err.... i'mnot really involve in the exhibition. JUst in the industry and have invites from colleges, hotels and suppliers. Can ask for more if i need to next time.
