Oops ! I have forgotten to add in the recipe for Kung Po Chicken. I have no measurement as its all instinct and personal taste.
Cube the chicken - whether debone or not its up to you. Marinate with oyster sauce, pepper and shao xing wine for at least half an hour. Blanch or fried in oil till half cook.
Dried Chilli - cut into 1 inch strip
Capsicum - red and green - deseed and cut into 1 - 2 inch pcs.
Onion - cut into quarters
Fresh Chilli - optional - deseed and cutinto diamond shape around 1/2 an inch in size.
Sauteed ingredient A till fragrant. Add in the pre fried chicken. Ad din oyster sauce, dark soya sauce, light soya sauce and lil shao xing wine. Mixed well and add cashew nut just before removing.
