Anyway, the chef had come out with some specialty and what i really love most is this dish - Claypot Fish Head
It is the dry type and i guess the recipe will be near as below.
50 gm - ginger whole - use the back of knife to crack it slightly
50 gm - garlic whole ( peeled of course )
50 gm - shallot whole ( peeled of course )
1 tablespoon - Fermented Bean Paste
1/2 table spoon - Oyster Sauce
1/2 tablespoon - Dark Soy Sauce
1/2 teaspoon - sesame oil
Pepper to season
Potato starch - a lil to thicken . I prefer not to use this.
400 gm - fish head - chopped into bite size of about 2 - 3 cm in size.
Coriander and Spring Onion for garnishing
Direction
Clean fish head. chopped them up to bite size. Steam with ginger and spring onion ( both not in the ingredient list ) till cooked. Drained.
Heat up a claypot. Sauteed the garlic, shallot and ginger with the sesame oil. Immediatelt add in the fish head, oyster sauce, fermented bean paste and dark soy sauce and season with a lil white pepper. Topped with coriander and spring onion.
Serve immediately. Stir themwell before eating . Try them.

not really based on taste, also on experience from seeing, eating and cooking similar dish lar.... not really dat good mah...I'm only a nickle chef not IRON CHEF....lolz
